A bowl full of protein and fiber, thanks to chicken, black beans and sweet potatoes. And the bulgur in the recipe delivers about 15 grams less carbohydrates and 2 times more fiber than a cup of brown rice.

Required products :

  • 2 teaspoons chili powder
  • 3/4 teaspoons ground cumin
  • salt to taste
  • 2 medium-sized sweet potatoes, peeled and diced
  • 3 tablespoons extra virgin olive oil
  • 220 grams of chicken breast (without skin and bones), cut into pieces
  • 1 cup red and / or green pepper, cut into small strips
  • 1/2 cup onion, chopped
  • 3 tablespoons lime juice
  • 1/2 cup bulgur
  • 1/4 cup fresh coriander, chopped
  • 1/2 can of black beans, rinsed
  • 1 packet (140 grams) of baby kale or spinach
  • 1/2 cup classic tomato sauce

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 220 degrees.

Make a mix of spices by mixing the chili, cumin and salt in a small bowl.

Put the sweet potatoes on one side of a large pan, pre-covered with baking paper, and season them with 1 tablespoon of olive oil and mix spices.

Put the chicken pieces, peppers and onions next to the potatoes in the pan and stir to mix all the ingredients. Distribute the vegetables evenly in the pan. Bake in the oven until gently crispy and the chicken softens, then sprinkle the potatoes with 2 tablespoons of lime juice. Stir gently, being careful not to mix the potatoes with the meat.

Meanwhile, cook the bulgur according to the instructions on the package, then add 1 tablespoon of lime juice, 2 tablespoons of coriander and salt to taste. Stir with a fork. Separately heat the black beans.

Divide the kale (or spinach) into 4 serving plates. Arrange with bulgur, chicken, sweet potatoes and beans. Sprinkle on top with classic tomato sauce and 2 tablespoons coriander.
