Required products :

5 halves of chicken fillet
1 jar of canned tomatoes in their own sauce (600 grams)
3 tablespoons olive oil
1 teaspoon Provencal herbs
1 teaspoon sugar
3 cloves garlic
1 egg
3/4 tea cup crumbs of white bread (crumbs)
30 grams of yellow cheese
100 grams of mozzarella
1.5 tablespoons oil
salt and ground black pepper to taste
lemon juice to spread on the fillet

Method of preparation :

Turn on the oven to preheat to 250 degrees.

Beat the fillet thoroughly, season with salt and ground black pepper, sprinkle with lemon juice.
Grind the tomatoes. If they are not peeled, pass through a sieve to remove the skins.
Pour the tomato puree (along with the juice) into a suitable container, add the olive oil, spices, sugar, crushed garlic and put on medium heat. Let the mixture boil until 1/3 of the original amount remains. Then pour the sauce into a pan.
Grate the cheese with a fine grater, then mix it with the bread crumbs. Beat the egg with a pinch of salt.
Dip the fillets first in the egg, then roll in the mixture of crumbs and cheese. Fry lightly on both sides and arrange in the pan with the tomato sauce.
Sprinkle with grated mozzarella and bake in the oven at 250 degrees for 15 minutes (until a yellow crust forms).
You may not fry the fillet, then roasting will continue for 30 minutes at 230 degrees.
Serve the dish with vegetable garnish.

Enjoy your meal!
