Fold a large sheet of parchment (measuring 30 by 40 centimeters) in half. Arrange the potatoes in one part, slightly overlapping them in two rows.
Brush with olive oil and season. Put the chicken fillet on top, season it, spread it with barbecue sauce. Arrange the onion crescents and wrap the meat in parchment, tightly closing the paper.
Bake at 200 degrees for about 25-30 minutes, until the meat is ready.
