How To Cook Chicken Fillet With Mint-lemon Sauce - Recipe

Required products :

  • 3 limes, finely grated rind and squeezed juice
  • 1/4 tea cup cold pressed olive oil
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh mint leaves, finely chopped
  • 5-6 pieces of chicken breast without skin

For garnish :

  • fresh mint leaves
  • slices of lime

Method of preparation :

  • In a small bowl, mix the grated rind and freshly squeezed lime juice, olive oil, salt and mint leaves.
  • Place the chicken fillet in a plastic bag with a closing mechanism and add the marinade.
  • Close the bag, removing as much air as possible from it.
  • Leave the chicken breasts to marinate in the refrigerator for a minimum of 2 hours, preferably overnight.
  • Turn the bag periodically to make sure the steaks taste evenly.
  • Heat a grill pan over medium heat and put 2 fillets in it.
  • Bake for about 7-8 minutes, turn the steak, spread the marinade on top and bake for another 6-7 minutes on the other side. Repeat with the remaining fillets.
  • Transfer the chicken breasts to a plate and spread the remaining mint-lemon sauce on them.
  • Let them rest for about 10 minutes, garnish with fresh mint leaves and lime slices and serve.
