How To Cook Chicken Fricassee According To An Old Recipe - Recipe

Necessary products: 

1.8-2.0 kg of chicken

4 sec. l. butter

1 s. l. flour

1 glass of dry white wine

1 cup chicken broth

1/4 teaspoon rosemary

2 sprigs of parsley

flour for rolling

left

pepper

2 egg yolks

2 tablespoons lemon juice

4 tbsp thick cream

Method of preparation:

Cut the chicken into portions, roll each piece of meat in flour and fry until golden in butter over low heat. In the same pan pour the wine and broth, add parsley, spices and stir. Place in the oven for 45 minutes at 180 degrees. After removing from the oven, transfer the meat to a plate. In a separate bowl, mix the egg yolks, lemon juice, cream and some of the hot sauce. Return the chicken to the pan, add the egg mixture and heat for 5 minutes without allowing to boil.

Serve with a garnish of fried mushrooms.
