How To Cook Chicken Fricassee With Mushrooms, Onions And Cream - Recipe

Required products :

  • 600 grams of chicken thigh steaks, without skin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons butter
  • 2 large yellow onions, finely chopped
  • 2 large carrots, cut into cubes
  • 1 teaspoon celery, cut into cubes
  • 250 grams of mushrooms, cut into slices
  • 1/4 tea cup flour
  • 1 teaspoon dry white wine
  • 1 1/2 teaspoons chicken broth
  • 1/4 tea cup whole cream
  • 2 teaspoons lemon juice
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme, finely chopped

Method of preparation :

  • Season the chicken with salt and freshly ground black pepper.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Fry the steaks for about 2-4 minutes on each side until lightly browned. Transfer to a plate.
  • Add the remaining oil to the pan and sauté the onions, carrots and celery for 4-6 minutes until soft. Stir periodically.
  • Add the mushrooms and cook for another 8-10 minutes.
  • Add the flour, stir and after 1 minute add the wine.
  • Let the sauce simmer for about 1-2 minutes, stirring constantly.
  • Add the broth, spread the chicken steaks and cook for another 12-15 minutes until the sauce thickens and the meat is completely cooked.
  • Add the cream and lemon juice, sprinkle with fresh parsley and thyme and serve.
