Required products :

  • 2-3 oranges
  • 1/4 tea cup soy sauce or tamari sauce
  • 1 1/2 tablespoons cornstarch
  • 700 grams of meat from the upper legs without skin, cut into cubes
  • 1/2 teaspoon salt
  • 2 tablespoons sunflower oil
  • 1 onion, cut into thin crescents
  • 4 crushed garlic cloves
  • 2 tablespoons grated ginger root
  • 2 small dried red hot peppers (crushed)
  • 300 grams of chopped kale (can be replaced with spinach)
  • 2 stalks of green onions, cut into thin circles
  • boiled white or brown rice for serving

 

Method of preparation :

Grate the peel of 1 orange and put it in a bowl. Squeeze its juice (if necessary, squeeze the juice from another fruit to fill 1/2 of a tea cup with the liquid).

Add the juice, soy sauce and starch to the orange peel, stir and set aside.

Peel the remaining orange, removing the white skin that covers each piece.

Heat a wok for 3 minutes on high heat. Work quickly: pour the oil and turn the pan to grease as much as possible, add onion, garlic, ginger and hot peppers. Fry them for 1-2 minutes until lightly browned.

Add the salted chicken and stir constantly for about 3-4 minutes. When the meat starts to turn golden, add the kale leaves.

Stir the mixture with the orange juice again and add it to the wok. Cook until the sauce thickens and remove from the heat.

 

Serve on boiled rice and garnish with peeled orange slices.
