Wash and dry the legs. In a deep frying pan with a lid, pour and heat the olive oil. Fry the meat on all sides, drain and set aside.
In the same fat add finely chopped bacon and mushrooms. Stir and add the chopped onion. Season with thyme, rosemary, salt and pepper to taste.
Mix the mustard with the cream, flour, broth and white wine, stir and pour into the pan. Return the meat, reduce the heat to a minimum and simmer for 30 minutes.
Serve warm, garnished with a sprig of fresh rosemary.
