How To Cook Chicken Legs In A Pan With Cauliflower Rice - Recipe

Required products :

  • 4 chicken legs, only the upper part
  • 1/2 lemon, freshly squeezed
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 4 cloves garlic, pressed
  • 1/2 cup diced onion
  • 1 cup cherry tomatoes
  • 400 grams of canned artichokes
  • 340 grams of cauliflower rice
  • 1/2 lemon, sliced

Method of preparation :

  • In a small bowl, mix the lemon juice, olive oil, thyme, black pepper and salt.
  • Stir and season the chicken legs on both sides. Leave them for 10 minutes with the spices.
  • Heat a large non-stick skillet over medium heat and roast the thighs skin side down for about 5-6 minutes without moving them.
  • Turn and continue to cook for 10-15 minutes until the meat is fully cooked.
  • Remove the chicken legs to a plate and cover with aluminum foil.
  • Saute garlic and onion in the same pan for 2 minutes.
  • Add the tomatoes and artichokes and cook for another 1 minute, stirring often.
  • Add the cauliflower rice and cook for about 5 minutes until soft.
  • Add the lemon slices and chicken legs, along with the separated sauces to the plate.
  • Submit them warm.
