How To Cook Chicken Legs In A Pan With Onions And Olives - Recipe

Required products :

  • 1 tablespoon cold pressed olive oil
  • 8 chicken legs, only the upper part
  • fine sea salt and freshly ground black pepper
  • 1 large red onion, cut into strips
  • 2 cloves garlic, finely chopped
  • 1 small jalapeno pepper, cleaned of seeds and finely chopped
  • 4 tablespoons fresh parsley, finely chopped
  • 1/2 tea glass of white wine
  • 1 cup green pitted and quartered olives
  • 1 lemon, freshly squeezed and the peel grated finely

Method of preparation :

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken legs with salt and pepper and place 4 of them in the pan skin side down.
  • Fry them for 5-6 minutes until golden brown, carefully turn and cook for another 3-4 minutes.
  • Remove the prepared legs to a plate and repeat with the rest.
  • In the same pan, saute the onions for about 3-4 minutes.
  • Add garlic, pepper and 2 tablespoons parsley. Stir and cook for another 4 minutes.
  • Return all the legs to the pan, placing them skin side up.
  • Pour in half of the wine and simmer until most of the wine has evaporated.
  • Turn the chicken legs and add the olives, grated lemon peel and the remaining wine.
  • Reduce heat and cook for 10 minutes.
  • Add the lemon juice, turn the legs and increase the power of the hob. Cook for another 5 minutes or until the chicken is fully cooked.
  • If desired, you can bake the dish in a preheated oven to 220 degrees for about 3-4 minutes.
  • Arrange the chicken legs on a plate and garnish with the sauce.
  • Serve warm, sprinkled with the remaining fresh parsley.
