Required products :

  • 8 chicken legs / only the upper part /
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • 40 whole cloves of garlic, peeled
  • 60 milliliters of dry white wine
  • 180 milliliters of homemade chicken broth
  • 6 potatoes, well washed, unpeeled
  • 6 stalks of fresh thyme

Method of preparation :

  • In a large saucepan, heat 1 tablespoon butter and 1 tablespoon olive oil over medium heat.
  • Season the chicken legs with salt and pepper and place them in the pan skin side down.
  • Fry for about 6 minutes, turn on the other side and fry again until golden brown. Work in batches, depending on the size of the container.
  • Arrange the legs in a rectangular tray measuring approximately 23/33 cm.
  • Stew the garlic cloves in the same fat in which you fried the chicken for about 2-3 minutes until soft.
  • Remove with a slotted spoon and spread them on the legs.
  • Leave the pot on the stove, add the wine and cook until it reduces its volume by half.
  • Add the chicken broth and the remaining butter. Stir and season with salt and pepper.
  • Drizzle the chicken and garlic cloves with the sauce.
  • Cut the potatoes into quarters, sprinkle with the remaining olive oil, season with salt and pepper, and distribute them between the legs.
  • Place the thyme stalks on top and bake in a preheated 180-degree oven for about 50-60 minutes.
  • Periodically pour the sauce over the chicken and if you find that it is ready before the potatoes, cover the pan with foil and return it to the oven.
  • Serve the chicken legs with potatoes and garlic cloves, garnished with sauce.
