How To Cook Chicken Legs With Anchovy Pesto And Green Onions - Recipe

Required products :

  • 4 upper chicken legs
  • 1 teaspoon salt
  • pepper
  • 5 tablespoons olive oil
  • 5 anchovy fillets, finely chopped
  • 1 clove of garlic, grated
  • 1/4 teaspoon parsley
  • 1 tablespoon vinegar or sherry wine
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon hot red pepper flakes
  • 3 green onion stalks, finely chopped

Method of preparation :

Tear off a large sheet of foil and prepare a heavy pan (other than the one you will use for cooking).

Heat a cast iron skillet with 1 tablespoon of olive oil, season the meat with salt and pepper.

Place the thighs skin side down in the hot pan. Place a sheet of foil on top and press with a heavy pan. Cook for about 10 minutes, reducing the heat.

Meanwhile, mix the anchovies with the vinegar, garlic, parsley and a pinch of salt. Mix well and add the remaining olive oil, mustard, vinegar and onion. Add salt to taste.

Remove the pan and foil from the meat and with a spatula carefully peel the skin from the bottom of the dish. Turn the meat over and continue cooking until ready, for another 1-2 minutes.

Serve the crispy legs with anchovy pesto and green onions.
