How To Cook Chicken Legs With Fresh Cabbage And Bacon In The Oven - Recipe

Required products :

  • 1 kg of chicken legs
  • kosher salt and freshly ground black pepper
  • 2 tablespoons oil
  • 220 grams of diced bacon
  • 1 onion, finely chopped
  • 450 grams of fresh cabbage, grated
  • 2 tablespoons grainy mustard
  • 1/2 cup apple cider vinegar
  • 3 teaspoons chicken broth
  • 3 tablespoons sugar
  • 2 bay leaves
  • 6 sprigs of thyme
  • 2 tablespoons unsalted butter

Method of preparation :

  • Heat the oil in a large non-stick skillet over medium heat.
  • Season the chicken legs with salt and pepper.
  • Place them in the pan skin side down and fry for about 8 minutes until golden brown and crispy.
  • Turn and cook for another 2-3 minutes on the other side. Take them out on a plate and cover with aluminum foil.
  • Bake the bacon in the same pan for about 3 minutes until lightly browned.
  • Add onion, stir and cook for another 4 minutes.
  • Add the cabbage, stir and cook until soft.
  • Add the mustard, vinegar, broth, sugar, bay leaves and thyme. Stir and bring the mixture to a boil.
  • Preheat oven to 180 degrees.
  • Pour the cabbage mixture into a pan and spread the legs on top. Most of them should be dipped in the sauce, but their skin should not be covered.
  • Bake the dish for about 45 minutes or until the liquid is reduced by half.
  • Melt the butter in the pan and season it with salt and pepper to taste.
  • Serve the chicken legs, garnished with cabbage and bacon and sprinkled with flavored butter.
