Mix the coconut milk with the curry paste and put them in a pan to heat. Add the lemongrass, ginger and garlic. Leave for 3-4 minutes on the stove.
Season the chicken with salt and pepper (do not overdo it with salt, as curry paste is often quite salty). Put it in a pan and pour the coconut mixture. Bake at 180 degrees for about 60 minutes, occasionally pouring the sauce.
Serve the meat, adding the sauce, coconut chips, rice and coriander to each serving. Serve with a few slices of lemon.
