How To Cook Chicken Legs With Tomatoes And Yellow Cheese - Recipe

Required products :

  • 4 chicken legs, the upper part / about 800 grams /
  • 1/2 tablespoon olive oil
  • 400 grams of canned tomatoes, drained and mashed
  • 1 cup cherry tomatoes
  • 750 grams of potatoes, peeled and cut into cubes
  • 1/2 cup grated yellow cheese
  • salt and pepper

For the dressing :

  • 2 tablespoons fresh thyme leaves, finely chopped
  • 1 tablespoon rosemary leaves, finely chopped
  • 2 cloves garlic, pressed
  • 3 tablespoons red wine
  • 3 tablespoons olive oil, cold pressed
  • 1/2 teaspoon salt
  • freshly ground black pepper

Method of preparation :

  • Preheat oven to 180 degrees.
  • Boil the potatoes until semi-finished and pierce them with a fork - this way they will taste better than the dressing. Season with salt and pepper.
  • Season the chicken legs with salt and pepper and fry them in olive oil in a large skillet over medium heat for about 3 minutes on each side.
  • Transfer them to a clay baking dish and distribute the potatoes around them.
  • Pour the mashed tomatoes on top and season with salt and pepper.
  • Sprinkle with the dressing, spread the cherry tomatoes and bake for about 20 minutes or until the chicken is fully cooked.
  • Remove from the oven, sprinkle with yellow cheese and bake for 5 minutes until melted.
  • Allow the chicken legs to rest in the clay pot for at least 5-10 minutes before serving.
