How To Cook Chicken Legs With Vegetable Sauce And Olives - Recipe

Necessary products for two servings:

 

  • 2 chicken legs
  • 1 onion
  • half a bunch of fresh onions
  • 2 soft tomatoes
  • 1 carrot
  • 100 grams of fresh spinach, chopped
  • 150 grams of green, red and black olives
  • 50 grams of capers
  • 1 eggplant
  • salt, black and red pepper
  • 50 milliliters of white wine
  • 50 grams of butter
  • 5 grams of garlic powder
  • 1 teaspoon smoked paprika
  • olive oil for frying

 

Method of preparation:

 

Pour water into a saucepan and boil the legs until semi-finished. Clean the broth from the foam, strain and separate 200 milliliters of it. Wash and cool the legs, put them in a pan and spread with a mixture of melted butter, garlic powder and smoked red pepper.

Heat olive oil and fry chopped old and fresh onions, grated tomatoes, finely chopped carrots and spinach. Peel and slice the eggplant, add it to the vegetable mixture. Add the capers, olives, pour the wine and season with salt, pepper and paprika. Pour the broth.

Stew the vegetables for 5 minutes and distribute them in the pan next to the meat.

 

Preheat the oven to 200 degrees and bake the dish for 20 minutes. Cool, pour into a plate and serve.
