Required products :

  • 4 whole chicken legs
  • 2 tablespoons olive oil
  • 1 head of garlic, cut in half + 1 clove
  • 5 cm ginger root, cut into thin slices
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1/2 teaspoon hot pepper flakes
  • 1 teaspoon turmeric
  • 3 teaspoons yogurt
  • 1 can of 400 grams of chickpeas, drained
  • thin slices of green onion, mint leaves and slices of lemon to serve

Method of preparation :

Season the legs with salt and pepper. Heat the fat in a deep frying pan and fry them skin side down for 10-15 minutes until crispy and golden brown. Transfer to a plate, placing the legs with the skin facing up so that they do not steam and the crispiness is not lost.

Reduce the heat and put the garlic head with the cut part down, add the ginger. Wait for them to start browning (about 4 minutes) and add the spice seeds and hot pepper. Put turmeric and 2 cups of yogurt, salt.

Return the meat to the pan (skin side up) and pour water into the bowl to cover 1/3 of the legs. Bring to a boil, then reduce the temperature to a very low degree and simmer until the meat is ready. It should be easily separated from the bone, and the whole cooking time is about 75-90 minutes. The hob must be very weak to simmer the liquid very lightly.

Cool for 10 minutes.

Meanwhile, add salt and pepper to the remaining yogurt. Grate the garlic clove, add it, mix well.

Put the milk mixture on the bottom of a serving plate and spread chickpeas on top. Carefully place the legs on top and pour the fat from the pan over them.

Sprinkle with green onions and mint leaves. Squeeze a lemon and serve.
