Required products :

  • 4 chicken legs
  • 3 thin strips of bacon
  • 1 onion
  • celery stalk
  • clove garlic
  • 1 teaspoon plain rice or a mixture of white and wild (equal parts)
  • 1/2 teaspoon salt and pepper
  • 1 tablespoon oil
  • ground coriander seeds
  • dried thyme

 

Method of preparation :

If you use wild rice, pre-fill it with water and let it stand for 40 minutes, then rinse. White just needs to be washed.

Make incisions along the thighs, remove the bone, carefully separating the meat from it.

 

 

Arrange the chicken skin side down on a board and cover with plastic wrap. Knock, remove the foil and rub the meat with salt and pepper. Cover again and deal with the filling.

Pour 2 cups of water into a saucepan, add salt and as soon as the liquid boils, pour the rice into it. After 5 minutes, reduce the heat to a minimum and let the beans cook for another 10 minutes. Remove from the heat and leave until they absorb the water.

Cut the onion into small cubes, chop the celery and garlic finely, and cut the bacon into small pieces.

Pour the bacon into a hot pan, let it fry for 2 minutes and then add the onion, celery and garlic.

 

After 5 minutes, transfer the mixture to a bowl and add the rice. Season with coriander and thyme.

 

In the middle of each piece of chicken put 1.5-2 full (with a tip) tablespoons of the stuffing and press it lightly. Leave about 2 centimeters of meat (from all ends) without rice.

 

Join the free ends in the middle, "bags" will form, which you fix with toothpicks.

 

Grease them with oil, wrap in aluminum foil and bake for half an hour in the oven.

 

Once they are ready, let them sit in the foil for 5 minutes and then remove it.

 

Serve immediately.
