Required products :
1 kg chicken breast
2 teaspoons sugar
7 teaspoons salt
400 grams hot
pepper to taste
Method of preparation :
Wash the chicken, remove the skin and fat, dry it with paper.
Put in a suitable container, sprinkle with sugar and salt, refrigerate for 2 days.
When you remove the breasts, put them in a bowl of cold water. Let stand for 2 hours, then dry.
Roll the meat in the hot pepper and ground red pepper and hang to dry for 4 days in a dry and ventilated place.
