Required products :

  • 2 chicken breasts, halved
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 1/2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 cup onion, finely chopped
  • 4 cloves garlic, cut into slices
  • 1/2 tea glass of dry white wine
  • 3/4 tea cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons capers, drained
  • 3 tablespoons fresh parsley, chopped

Method of preparation :

  • Place each half of the chicken breast (4 in total) between the plastic wrap and lightly thin it with a meat hammer.
  • Season with salt and pepper.
  • Separate 1 tablespoon of flour in a small bowl and transfer the remaining amount to a shallow dish.
  • Roll the chicken steaks in the flour and shake off the excess.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add 1 tablespoon of olive oil and shake the pan to mix.
  • Saute the meat on each side for about 4 minutes, then wrap it in aluminum foil and set aside to rest.
  • Meanwhile, heat the remaining olive oil and sauté the onions for about 3 minutes, stirring often.
  • Add the garlic and after about 1 minute pour in the wine.
  • Cook until the liquid has almost evaporated, remembering to stir.
  • Add 1/4 teaspoon of broth with 1 teaspoon of flour and mix until smooth.
  • Add the remaining broth and cook until the liquid has evaporated in half (about 5 minutes).
  • Sprinkle with the remaining flour, stir and after a minute remove the sauce from the heat.
  • Add the remaining butter, lemon juice and capers. Stir again.
  • Arrange the chicken breasts on a plate, sprinkle each with 2 tablespoons of sauce.
  • Garnish with fresh parsley and serve.
