How To Cook Chicken Porridge With Rice - Recipe

Required products :

  • 1 tablespoon olive oil
  • 1 kg of whole legs
  • 3 cloves garlic, crushed with a knife, and 1 finely chopped
  • 1 onion, cut into thin slices
  • 1 fennel, cut into thin crescents (keep the petals)
  • 1 cinnamon stick
  • 1 teaspoon arborio rice
  • 4 sprigs of thyme
  • 2.5 liters of chicken broth
  • grated lemon peel and the juice of half a lemon
  • 1/2 teaspoon crushed walnuts

Method of preparation :

Heat the fat in a saucepan and fry the meat for about 6 minutes on each side until golden. Transfer to a plate, reduce the heat and add the crushed garlic cloves, onion and fennel. Fry for 15 minutes.

Return the meat to the pan, add the cinnamon, rice, thyme and broth. Allow to simmer for about 1 hour, stirring occasionally until the rice is completely cooked. Remove the thyme and cinnamon stick.

Bone the meat and chop it, then return it to the soup. (If necessary, add more broth or water) and season with lemon juice.

Combine finely chopped garlic, fennel leaves, lemon peel in a bowl.

Serve the soup with the walnut mixture on top and pour a little high quality olive oil.
