Cut the stalks of celery diagonally (without using the leaves). Mix the meat and celery in a bowl and add 1 tablespoon of salt.
In a suitable bowl, mix the buttermilk, honey, vinegar, 1 tablespoon of black pepper and the remaining half a tablespoon of salt. Pour the resulting dressing over the meat. Add the apricots (pre-chopped) and sprinkle with crushed blue cheese, mint leaves and celery and mix well.
When serving, sprinkle the salad with a little more black pepper, if desired.
