How To Cook Chicken Soup With Broccoli, Leeks And Potatoes - Recipe

Required products :

1 chicken about 1.5 kg
1 large or 2 small carrots
1 large or 2 small onions
2 leeks
4-6 stalks celery
4 potatoes
350 grams broccoli
2 tablespoons oil
3 grains black pepper
1 bay leaf
salt and ground black pepper taste

 

Method of preparation :

Cut the carrots into large pieces, also half an onion, if large, or a small one. Cut a piece of celery.

 

Put the chicken in a saucepan, add the prepared vegetables, bay leaf and black peppercorns. Fill with water and place the dish on the stove. When the liquid boils, reduce the temperature and let everything cook for 40 minutes on low heat. Periodically remove the foam that has formed.

 

Cut the remaining vegetables into small cubes.

 

Leek - in circles.

 

Peel the potatoes, chop finely, boil the broccoli.

 

When the chicken is ready, remove from the broth and allow to cool.

Then strain the liquid and remove all the spices and vegetables that have been boiled so far.

 

In the pot in which the broth is boiled, pour 2 tablespoons of oil and put on medium heat. Add the finely chopped raw vegetables (carrots, celery, onions and leeks), stir and let simmer for 5 minutes.


Then put the potatoes, stir and after 5 minutes pour the broth. Close the pan with a lid and let it cook for 15 minutes.

 

During this time, separate the meat from the bones and cut it into small pieces.

Pour them over the other products and season with salt and ground black pepper to taste. Leave on the stove for 5 minutes without closing the pot with a lid.

 

The soup is ready, all you have to do is add the broccoli before serving.
