Required products :

  • 5 pieces of bacon, cut into cubes
  • 1 onion, chopped
  • 1 carrot, cut into circles
  • 2 stalks of celery, cut into thin slices
  • 1 tablespoon fresh thyme
  • 230 grams of cream mushrooms, thinly sliced
  • 4 cloves garlic, chopped
  • 4 teaspoons chicken broth
  • 1 teaspoon water
  • 1 connection kale, cut
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 170 grams of boiled chicken breast, grated or diced
  • 200 grams of pre-cooked rice (wild, basmati or other)
  • 1 cup fresh milk
  • 1 tablespoon melted butter
  • 50 grams of flour

Method of preparation :

Cook the bacon for 4 minutes in a saucepan, transfer it to a plate and fry the onion, carrot and celery for 3-4 minutes in the fat that has separated.

Add the mushrooms, garlic and thyme and fry for another 5 minutes. Pour in the chicken broth and water and simmer until the vegetables are soft. Add the kale, season with salt and pepper, stir and add the chicken and rice.

Mix the fresh milk with the melted butter and the flour until creamy. Pour into the soup pot and stir until thickened.

Serve the soup in bowls and garnish with crispy bacon.
