Required products :

  • 1/3 tea cup olive oil
  • 6 chicken steaks from the leg
  • 1 onion, finely chopped
  • 1 fennel, finely chopped (leaves separated and finely chopped)
  • 2 cloves garlic
  • 1 teaspoon fennel seeds
  • 1 bay leaf
  • 2 cans of 400 grams of chopped tomatoes
  • 1.5 liters of chicken broth
  • 2 teaspoons grated Parmesan + Parmesan peel
  • fresh marjoram leaves (2 tbsp)
  • 2 slices of bread with yeast, without crusts, chopped into bites
  • baby mozzarella to serve

Required products :

Heat 2 tablespoons olive oil in a saucepan. Season the chicken and fry for 6-7 minutes until golden.

Remove to a plate and fry the onion, fennel and garlic in a saucepan. Reduce heat and, when soft, add bay leaf and seeds. Once they release their aroma, add the tomato sauce, broth and parmesan peel.

Cook for 1 hour and 15 minutes until the sauce thickens.

Heat the remaining 2 tablespoons of olive oil and fry the bread briefly until crispy and golden. Add the grated Parmesan cheese and season with fennel leaves.

Serve the soup with bread and baby mozzarella.
