Required products :

  • 1 tablespoon olive oil or coconut oil
  • 450 grams of chicken breast (without skin and bones)
  • 1/3 cup flour
  • 4 cups low-fat milk
  • 2 cups boiled brown rice
  • 3 cups broccoli
  • 1 and 1/2 cups grated cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup fried onions (optional)

Method of preparation :

Preheat oven to 200 degrees.

Cut the chicken breasts into fillets. Heat olive oil or coconut oil in a large skillet over high heat. Fry the chicken fillets on both sides until browned. Then cut them into small pieces.

Mix the flour and 2/3 cup of milk in a small bowl. Stir until smooth. Pour together with the remaining 3 and 1/2 cups of milk in the same pan in which you fried the chicken fillets, and cook over medium heat, stirring often, until the sauce thickens.

Add the cooked brown rice and broccoli. Stir and cook until the broccoli is soft. Then add the pieces of chicken, cheddar cheese, salt and pepper and stir. Sprinkle with fried onions and bake in the oven for 10-12 minutes or until done.

After removing the dish from the oven, sprinkle with parsley and serve.
