How To Cook Chicken With Halloumi Cheese And Homemade Pesto - Recipe

Required products :

  • 2 pieces of chicken breast
  • 220 grams of halloumi cheese
  • 250 grams of cherry tomatoes
  • 4 large basil leaves
  • 2 teaspoons salt and pepper
  • 1/3 tea cup olive oil (80 milliliters)

for the pesto:

  • 1/3 tea cup olive oil
  • 3 cloves garlic
  • 2 handfuls of basil
  • salt, pepper to taste (about 1 teaspoon)
  • the juice of 1/2 lemon

Method of preparation :

Turn on the oven to heat to 175 degrees.

Cut the cheese into 3-4 slices, each of which cut in half.

Put olive oil, salt and pepper in a large bag with a zipper. Put the chicken and cherry tomatoes in it. Close the bag and roll the products well in the mixture.

Transfer them to a large pan (along with the fat from the bag). Put two basil leaves on each piece of meat and cover with cheese on top.

Bake for 10-15 minutes, until the chicken is ready.

Remove the meat from the pan and bake the cherry tomatoes for another 10 minutes.

Meanwhile, put the garlic, olive oil, spices and lemon juice in a blender. Blend for 30 seconds and add the basil leaves. Grind to get a puree with the consistency of pesto.

Serve the chicken with roasted tomatoes and homemade pesto.
