Learn how to cook "Chicken with mushrooms and onions in red wine". Delicious recipe.
Required products :
1.5 kilograms of chicken meat
1/2 bottle of dry red wine
6 pieces of bacon or fatty bacon
250 - 300 grams of mushrooms
12 small shallots
2-3 large cloves of garlic
2 large carrots
cold pressed olive oil
2 sprigs of fresh thyme or 2-3 pinches of dried
1 bay leaf
freshly ground black pepper

Method of preparation :
Divide the meat into 8 portions (or more), put it in a saucepan and pour the wine. Cut the onion into circles. Peel the carrots and cut them into 4 lengths. Put them together with the onion next to the meat, add the thyme, the bay leaf and put the dish in the fridge for a day to marinate the products. Then drain the wine and store it in a separate container. Dry the pieces of meat with a paper towel. Heat olive oil in a thick-bottomed pan, fry the chicken over medium heat until golden brown on all sides and remove with a slotted spoon. Put on a plate.
In the same pan in which you fried the meat, put the vegetables (removed from the marinade) and the crushed garlic. Fry for 2-3 minutes.
Put the chicken and vegetables in a thick-walled saucepan, pour the wine you saved over them, season with salt and pepper. Bring to a boil over medium heat, then reduce the temperature to a minimum and allow the dish to cook with the lid tightly closed for 1.5 - 2 hours.
During this time, prepare the mushrooms - cut their legs (you will not need them), cut the hats into pieces, bacon - into small cubes. Fry both products (for 15 - 20 minutes).
When the chicken is ready, add the mushrooms and bacon. If necessary, season with more salt and pepper. Before serving, sprinkle the dish with chopped parsley.
