How To Cook Chicken With Onion, Mushrooms And Wine Sauce - Recipe

Required products :

  • 1 teaspoon boiling water
  • 1 tablespoon grape seed oil
  • 1 tablespoon olive oil
  • 250 grams of mushroom mushrooms
  • 50 milliliters of red vermouth
  • 2 tea cups finely chopped onion
  • 1 small carrot, grated
  • 3 tea cups peeled and sliced ​​tomatoes
  • 1 tablespoon tomato paste (concentrate)
  • 1 teaspoon dry red wine
  • 1 pinch of hot pepper flakes
  • 3 tablespoons mix fresh green spices - parsley, thyme, savory and more.

Method of preparation :

Preheat oven to 170 degrees.

Dry the chicken and season with salt.

Cover the mushrooms with hot water and let them soak until soft.

Remove the mushrooms and squeeze them out of the water, then chop them finely and set aside.

Strain the liquid from the mushrooms through a strainer and save it.

Heat the two video oils in a thick-bottomed saucepan and fry the chicken in hot fat until browned. Take it out on a plate and pour the fat out of the pan (save very little).

Fry the mushrooms until golden, adding the mushrooms and vermouth to them. Cook until the liquid evaporates and transfer to a plate.

Fry the onion in the same pan (add fat if necessary), season with a little salt. When soft, add carrots and stir, add tomatoes, tomato paste, hot pepper, wine and water from soaked mushrooms. Stir and bring to a boil.

Mix the fresh spices with the mushrooms and return to the pot with the onions. Add the chicken and all the juices that have separated from it in the bowl. Cook for 1 hour until the meat is fully cooked and the sauce thickens.
