Required products :

  • 6 upper chicken legs
  • 3 tablespoons butter
  • 1 head of fennel, finely chopped (leaves separated)
  • 1 leek, chopped
  • 240 grams of pasta orzo
  • 1/3 tea glass of dry white wine
  • 2 1/2 teaspoons chicken broth
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon peel

Method of preparation :

Dry the meat and season it with salt and pepper.

Put 2 tablespoons of butter in a pan and heat. Put the meat skin side down in the hot pan and fry until crispy. Turn the meat over and transfer with the pan to the oven for 10-15 minutes to bake at 200 degrees until ready (if your pan does not have a fireproof handle, transfer to a pan). Remove the meat from the pan and place it on a plate.

In a pan, fry the leeks and fennel, seasoned with salt and pepper until soft - about 5 minutes. Add the orzo pasta and fry until browned. Pour the wine and after the liquid has evaporated, start adding the broth to 1/2 tea cup, waiting for it to be absorbed, then add the next hour. After about 10-15 minutes the paste is ready.

Remove the pan from the heat, try and, if necessary, season. Add the remaining 1 tablespoon of butter and butter. Finally, sprinkle with chopped fennel leaves and serve.
