For the chicken:
Combine lemon juice, oregano, coriander, garlic and olive oil and blend until smooth. Season with salt and pepper. Put the meat in a zippered bag and pour half of the marinade. Refrigerate for 1 to 4 hours to taste.
Remove the legs from the bag and dry them with paper. Season with salt and pepper.
Heat the oil in a pan and when it clogs, fry the meat until done. Transfer to a kitchen board and allow to cool for 5 minutes.
Cut into pieces and place on a plate. Drizzle with the remaining marinade and cover with foil, refrigerate.
For the rice, melt the butter in a saucepan, add the turmeric and cumin when they release their aroma (but they should not brown), add the rice and stir. When the berries become transparent, pour the broth and season. Cover with a lid and reduce the temperature, the rice should simmer for 15 minutes. Then remove from the heat, set aside to fully absorb the liquid - for another 15 minutes.
To make the sauce, mix all the products in a bowl and salt to taste.
Before serving, place the meat in a pan and heat on a hot plate.
In large plates, distribute the rice, lettuce, tomatoes, toast, place the chicken on top and pour the sauce. Finish with hot harissa sauce.
