Required products :

  • 500 g smoked sausage
  • 1/2 cup peanut oil
  • 3/4 tea cups self-swelling flour
  • 1 large onion
  • 1 red pepper
  • 1 tea cup chopped celery (stalks)
  • 2 cloves garlic
  • 2 tablespoons spice "kajun"
  • 1/8 teaspoon black pepper
  • 1 1/2 liters of chicken broth
  • 1 kg. skinless chicken breast

for potatoes:

  • 1 1/2 kg of potatoes
  • 1 tablespoon peanut oil
  • 1 teaspoon salt

Method of preparation:

Cut the sausages into circles and fry in a pan on high heat for 7 minutes on each side until well fried. Pour them into a plate.

In a saucepan, heat the oil over medium heat and add the flour. Stir constantly and leave on the stove until the flour is baked and acquires a caramel color (this can take 15-20 minutes). When this happens, reduce the heat and cook for another 2 minutes until the mixture darkens and acquires a smooth texture.

Finely chop all the vegetables and crush the garlic. Add the vegetables to the flour - onion, pepper, celery and garlic. Stir constantly for 3 minutes and gradually pour in the chicken broth. Add sausage and chicken, season with pepper and spice cajun. Reduce heat and cook for 1 hour and 30 minutes until chicken is done. Remove the chicken breasts to a plate and divide them into large pieces using two forks, then return them to the dish.

Preheat oven to 220 degrees. Wash and slice the potatoes, preferably using fresh small potatoes. Rinse them well under running water. Cut them into large pieces and place them in a bowl. Add salt and oil and mix well. Bake for 40-45 minutes, until covered with a crispy brown crust.

Serve the finished dish in a bowl, placing the baked potatoes on the bottom and add the soup. Eat more while it's hot!
