How To Cook Chicken With Vegetables, Bulgur And Coriander Chutney - Recipe

Required products :

  • 1 cup bulgur
  • 1 and 1/2 cups water
  • 500 grams of chicken breast, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/2 cup coriander chutney
  • 1 diced cucumber
  • 1 red pepper, cut into cubes
  • 200 grams of cherry tomatoes, cut in half
  • 1 lime, cut into slices

* A tea cup is used to measure the quantities.

Method of preparation :

Pour the bulgur into a saucepan of water and bring to a boil. When this happens, reduce the temperature of the hob, close the pan with a lid and let the beans simmer until they soften and absorb the liquid (about 10-15 minutes). Spread the bulgur on a plate covered with kitchen paper to cool before serving.

Move the oven rack to the top shelf and heat the appliance to a high temperature. Grease a pan with olive oil. Season the chicken with garam masala and salt, put in the prepared dish and bake for 4-8 minutes on each side. Remove the chicken to a cutting board and leave for 5 minutes before slicing.

Pour into small boxes 2 tablespoons of chutney, close and store in refrigerator. Divide the bulgur into 4 boxes, garnish with chicken, cucumber, black pepper, cherry tomatoes and a slice of lime. Close the box and store in the refrigerator for up to 4 days. Before serving, season with coriander chutney and freshly squeezed lime juice.
