Boil chickpeas until cooked and rinse the beans. Cut the eggplant into cubes and add salt. When they release their juice, rinse them quickly and dry immediately. Then fry in oil and cool.
Mix chickpeas and eggplant, add chopped onion, garlic, parsley. Season the salad with salt, pepper, oil and lemon juice.
