Soak chickpeas overnight, then wash and boil in clean water, along with a little salt and pepper and crushed garlic cloves. Once the water boils, reduce the heat and simmer the chickpeas for between 1 and 2 hours until soft, but should not fall apart.
Once the chickpeas are cooked, pour the water out of it and transfer it to a large pan to cool faster.
Meanwhile, put the thinly sliced onion in a bowl, add the sumac, salt and pepper. Stir the spices and onion with your hands for a few minutes and pour out the liquid that has separated.
Add the chickpeas to the onion and add the finely chopped parsley. Stir the products with your hands or two forks. Season with salt and pepper.
Refrigerate the salad until it is served (it is best to leave it overnight).
Just before serving, sprinkle with chopped mint leaves.
