Required products :

  • 400 grams of fresh or canned chickpeas
  • 3 stalks of celery
  • a few cloves of garlic - to taste
  • 1 onion
  • 20 milliliters of vegetable oil
  • 250 milliliters of tomato juice or 3-4 fresh tomatoes
  • 1 unpeeled red pepper

Method of preparation :

Pour cold water over the chickpeas for a few hours, then cook until done.

Peel an onion, chop finely, mash the garlic. Wash the pepper, remove the seeds and cut it together with the celery into thin pieces.

Heat the oil and fry the onion and garlic in it until semi-cooked over low heat (about 7 minutes). Then add the celery, pepper and let cook for 5 minutes.

Pour the tomato juice into the pan with the fried vegetables (you can slice fresh tomatoes instead of juice). Stew everything for 7-8 minutes.

When the chickpeas are soft enough, add the vegetable stock to it. Season the soup to taste. You can serve by sprinkling with chopped fresh parsley or sour cream.
