Put the flour, baking powder, smoked pepper, thyme and salt in a bowl and mix. Add 185 milliliters of water and stir.
Fry the onion in olive oil for about 4-5 minutes. Add the chopped sun-dried tomatoes to the pan and fry for 2 minutes. Remove the vegetables to a plate and allow to cool well before adding them to the dough.
Once cooled, stir them into the pancake mixture.
Heat a non-stick skillet. Take 1 ladle of the dough and pour into the pan. Flatten and bake for 6 minutes on each side. Turn when the edges have turned golden brown, do not rush so as not to break the pancakes.
Put the pancakes in a serving dish. Garnish each with avocado, roasted peppers and coriander.
