Discover the aromas of the village in this healthy soup with chickpeas, peppers and kale plus apricots for sweetness. You will be surprised by the pleasant combination of all these useful ingredients.

Required products :

  • 2 roasted red peppers, cut into thin strips
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, chopped
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons Harissa pasta
  • 2 cans of chickpeas, drained
  • 1 1/2 liters of vegetable broth
  • 150 grams of kale, chopped
  • juice and peel of 1 lemon
  • 50 grams of dried apricots, chopped (optional)
  • 1/2 small bunch fresh parsley, chopped
  • yogurt for serving (optional)

Method of preparation :

Heat olive oil and fry onions until soft. Add the garlic, coriander, cumin and Harissa paste and cook for another minute.

Pour the chickpeas and vegetable broth and simmer for 15 minutes under a closed lid.

Add the peppers, kale, lemon zest and juice and dried apricots (optional) and cook for another 5 minutes without removing the lid.

Serve the soup in bowls, sprinkle with parsley and serve with yogurt if desired.
