How To Cook Chickpea Stew With Spinach And Boiled Eggs - Recipe

Required products :

  • 2 large eggs
  • 1 tablespoon olive oil
  • 2 teaspoons cumin seeds
  • 1 teaspoon mustard seeds
  • 2 tablespoons curry powder
  • 1 teaspoon garlic granules
  • 1 teaspoon dried ginger
  • 400 grams of chopped canned tomatoes
  • 400 grams of canned chickpeas, drained and rinsed
  • 1 tablespoon lemon juice
  • 100 milliliters of hot water
  • 180 grams of baby spinach
  • salt and pepper
  • coriander or parsley for garnish

Method of preparation :

Boil the eggs in a saucepan until ready - about 6-8 minutes, according to the desired hardness of the yolk. Once cooled, peel.

Meanwhile, fry the cumin and mustard seeds, curry spice, garlic and ginger in olive oil for 1 minute until they release their aromas. Add tomatoes, chickpeas, lemon juice and hot water, season with salt and pepper. Cover with a lid and simmer for 6-8 minutes until the sauce thickens, then add the spinach.

Serve two portions, putting a halved boiled egg in each. Sprinkle with a little curry powder if desired and garnish with coriander or parsley.
