Required products :

  • 2 tablespoons olive oil
  • 1/2 cup thinly sliced ​​onion rings
  • 1 tablespoon chopped fresh thyme
  • 4 cloves garlic, cut into slices
  • 1/2 teaspoon dry white wine
  • 300 grams of chopped fresh tomatoes
  • 3/4 tea cup of chickpea flour
  • 3/4 tea cup of milk
  • cheddar
  • 1 egg - divided into egg white and yolk
  • 1 tablespoon vinegar
  • 1 teaspoon baking powder
  • 4 eggs for frying

Method of preparation :

Heat 1 tablespoon olive oil and fry the onion rings, add the thyme, garlic and cook for 3-4 minutes until the vegetables are soft.

Pour the wine and season with salt and pepper. Put the tomatoes and cook for 5 minutes until the liquid is reduced by half.

In a bowl, mix the flour, milk, 1 tablespoon olive oil, a pinch of juice and pepper, cheddar and egg yolk. Stir, finally add baking powder and vinegar.

Beat the egg to a froth and add it to the dough, stirring gently so that it does not lose its volume.

Bake the waffles until ready.

Fry the eggs or spread them in water (with a little vinegar in it).

Serve the waffles with tomatoes, egg and a little thyme.
