Required products :

  • 2 tablespoons olive oil
  • 2 shallots, thinly sliced
  • 1 tablespoon parsley stalks
  • 1 small green pepper
  • 1 clove of garlic, mashed
  • 100 grams of bacon
  • 2 cans of 400 grams of chickpeas
  • 1/2 cup tomato sauce
  • 4 eggs

Method of preparation :

Heat olive oil and fry onions, parsley stalks, bacon, garlic and cook for 2-3 minutes until shallots are soft. Add chickpeas and stir. A few minutes later add the tomato sauce, 1 cup of water and reduce the temperature. Cook for 10-15 minutes until the sauce is reduced. Season and make 4 holes in the mixture, in which beat one egg. Cover with a lid and wait 3-4 minutes until they are cooked. Serve the dish warm.
