Required products (for 2 servings) :

  • 1 cup chickpeas
  • 2 sprigs of rosemary
  • 2 bay leaves
  • a few sprigs of parsley
  • 1/2 lemon

For the sauce:

  • 400 grams of chopped tomatoes
  • 1 small onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • black pepper (ground)
  • left

 

Method of preparation :

Pour chickpeas with warm water for 8 hours. Then drain the liquid, fill the beans with clean water and cook for 5 minutes. Then change the water again, this time you can use broth (vegetable or chicken). Add the bay leaves, rosemary and parsley stalks (without the leaves).
Place the pan on the hob and reduce the temperature as soon as the liquid boils. Boil chickpeas until soft under a lid, simmer for an hour and a half.

Meanwhile, heat the olive oil and fry the chopped garlic and onion in it for a few minutes, stirring constantly. Then add the tomatoes and reduce the heat.

Add a pinch of salt, pepper, oregano and let the sauce simmer for about half an hour, stirring and mashing the tomatoes with a spatula. A thick and almost uniform consistency must be obtained.

When both the chickpeas and the sauce are ready, mix them (transfer the beans to the tomato bowl together with the liquid in which they were cooked).

Let the dish simmer on low heat for about 20 minutes (or until the desired consistency of the sauce), during which stir periodically and meanwhile remove the parsley stalks and bay leaves.

 

If necessary, add extra salt. Finally, add the chopped parsley leaves, grated lemon peel and citrus juice.
