Required products :
2 eggplants
100 grams chickpeas
4 tablespoons olive oil
1 bunch coriander
4 sprigs of parsley
2 cloves garlic
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1/2 teaspoon cumin seeds
1/2 teaspoon ground red pepper
salt to taste
Method of preparation :
Pour chickpeas with water for 4-6 hours, then drain the liquid and boil the beans in clean salted water until ready (about 60-90 minutes). Be careful not to boil.
Cut the aubergines into large cubes and fry them in olive oil on all sides until they form a yellow crust. Then add salt to taste and simmer until cooked through (until soft). Cool.
Grind parsley, coriander and garlic cloves, add red pepper, cumin, olive oil, vinegar and lemon juice.
Mix chickpeas and aubergines in a suitable bowl, add the aromatic sauce, add salt to taste and store the dish in the refrigerator for 2 hours.
