Required products :

 

  • 500 grams of boiled or canned chickpeas
  • 3 tablespoons olive oil
  • 4 - 5 cloves garlic
  • 1 small onion (preferably red)
  • 2 tablespoons tomato paste
  • 400 milliliters of vegetable broth
  • black olives to taste
  • juice of 1 lemon
  • oregano to taste
  • Bay leaf
  • salt and pepper to taste

 

Method of preparation :

Pour the chickpeas (without the liquid) into a suitable bowl with a thick bottom. Add olive oil and crushed or crushed garlic, place on the stove and let the mixture simmer on low heat for 5 minutes, stirring. Then add the tomato puree, lemon juice, finely chopped onion, bay leaf, oregano and pour all the hot vegetable broth. Allow everything to cook until the sauce thickens.

Before turning off, add chopped olives to taste.

You can serve the dish both hot and cold.
