Required products :

  • 1 cup dry chickpeas
  • 1 large clove of garlic, chopped
  • 3/4 teaspoons salt
  • 2 cups full-fat yogurt
  • 1 and 1/2 tablespoons extra virgin olive oil
  • 2 tablespoons tahini
  • 3 tablespoons pine nuts
  • 1 wholemeal bread loaf
  • fresh parsley, chopped for garnish

Method of preparation :

Put chickpeas in a large bowl. Add enough cold water to cover it and let it soak for 8 to 24 hours. Another option is to put chickpeas in a large saucepan and pour cold water over it. Bring to the boil and cook for 2 minutes, then remove from the heat and let stand for 1 hour.

Drain the chickpeas, transfer to a large saucepan and add water to cover. Bring to a boil over high heat and reduce the heat. Cook until the beans are soft, ie for about 30 minutes.

Preheat oven to 200 degrees.

Mash the garlic with 1/4 teaspoon of salt to make a paste. Mix in a medium bowl the garlic paste with the yoghurt, tahini, 1 tablespoon of olive oil and 1/4 teaspoon of salt. Set aside the milk sauce.

Heat 1/2 teaspoon olive oil in a small skillet over medium heat and roast the pine nuts. Stir often for 2-3 minutes or until lightly browned. Transfer to a small bowl.

Put the pie in the oven to bake on both sides until crispy and golden. Allow to cool slightly, then break into pieces.

Strain the chickpeas, keeping 1/4 cup of the water in which you boiled it. Return the beans and 1/4 cup of water to the pan. Add 1/4 teaspoon of salt and stir.

Serve chickpeas on a plate. Drizzle with milk sauce, pieces of pie and pine nuts. Garnish with parsley if desired. Eat the dish while it is warm.
