How To Cook Chickpeas With Tomato Sauce And Vegetables (Chole) - Recipe

Required products :

  • 1 hot pepper, chopped
  • 4 large cloves of garlic
  • 4 cm ginger root, chopped in bulk
  • 1 onion, chopped
  • 6 tablespoons sunflower oil or grape seed
  • 2 teaspoons ground coriander and cumin
  • 1/2 teaspoon turmeric
  • 1 can of 800 grams of chopped tomatoes
  • 3/4 teaspoon salt
  • 2 cans of chickpeas (400 grams each)
  • 2 teaspoons garam masala
  • coriander for serving

Method of preparation :

Using a food processor, chop the garlic, ginger and hot pepper very finely (you can alternatively chop them very finely with a knife). Add the onion and cut it into small pieces, but it should not be pureed.

Heat oil in a pan and fry the onion mixture until soft - about 3-5 minutes. Add the dry spices and cook for another 2 minutes to release their aroma.

Grind the tomatoes in a food processor. Pour them into the pan and season with salt. Reduce heat and simmer for 5-6 minutes until the sauce thickens. Add chickpeas and garam masala, stir and continue cooking for another 5 minutes.

Serve with rice if desired and sprinkle with coriander.
