How To Cook Chicory Onion Tart - Recipe

Required products :

  • 1 sheet of puff pastry
  • 1 tablespoon olive oil
  • 1 teaspoon butter
  • 4 sprigs of thyme
  • 1 tablespoon brown sugar
  • 2 small onions, peeled and cut into thick circles
  • 2 heads of chicory, chopped
  • the juice of half a lemon
  • 75 grams of gorgonzola
  • 1 tablespoon roasted hazelnuts

Preparation :
Preheat the oven to 180 degrees.

Cut the puff pastry to the same size as the baking tin you are using and freeze for 30 minutes.

In the same pan on which you measured the dough, melt the olive oil and butter. Add the sugar and stir. Put the onion in the middle and the chicory leaves around it and leave for 10 minutes to caramelize. Drizzle with lemon juice and set aside to cool briefly.

Place the puff pastry sheets on top and press the edges to close the filling tightly. Punch the dough with a knife so that the steam comes out and bake for 40 minutes until the dough swells and becomes golden.

Allow to cool for 10 minutes, then gently turn into a plate. If onions have stuck to the pan, push them slightly with a knife and put them back in place.

Season with salt and pepper and sprinkle with grated cheese. Sprinkle the hazelnuts and pour a little olive oil before serving.
