Sponge cake with chocolate and pears, garnished with sour cream glaze and dark chocolate, sprinkled with crushed nuts.

Required products :

  • 250 grams of melted butter + more for greasing
  • 250 grams of powdered sugar
  • 200 grams of self-swelling flour
  • 50 grams of wholemeal flour
  • 100 grams of almond flour
  • 1 teaspoon baking powder
  • 2 teaspoons spice for pie
  • 1 teaspoon cinnamon powder
  • grated nutmeg
  • 50 grams of hazelnuts, chopped
  • 50 grams of almonds, chopped
  • 50 grams of pistachios, chopped
  • 50 grams of macadamia nuts, chopped
  • 100 grams of dark chocolate, chopped (or chocolate chips)
  • 3 eggs
  • 1 teaspoon almond extract
  • 2 pears, peeled and chopped

for the glaze:

  • 300 milliliters of sour cream
  • 100 grams of dark chocolate, crushed
  • 100 grams of milk chocolate, crushed

Method of preparation :

Preheat oven to 180 degrees. Grease and cover the bottom and walls of a round pan with butter.

Mix the sugar with the three types of flour, baking powder, pie spice and cinnamon.

Mix the chopped nuts and take 2 tablespoons of them for decoration, and pour the rest into the bowl with the flour. Add the chopped chocolate (or chocolate chips) and stir.

Combine the melted butter, eggs and almond extract and pour into the bowl with the dry ingredients, add the pear pieces and stir. Pour the mixture into the prepared pan and bake for 45 minutes. Then cover with foil and bake for another 20 minutes or until done. Cool in the pan overnight.

Pour the sour cream and chocolate into the pan and heat slightly, stirring until melted. Cool overnight or until the glaze has cooled completely.

Remove the cake from the pan and pour the icing on top, decorate with crushed nuts, cut into pieces and serve.
