Required products :

  • 3 proteins
  • 3 3/4 tea cups sugar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cream tartar or 1 1/2 teaspoon lemon juice
  • 1 teaspoon cream
  • 1/4 tea cup of fresh milk
  • 1/8 teaspoon vanilla extract
  • 200 grams of chocolate
  • 1/2 cup coconut oil

Method of preparation :

Line a small square baking tray with baking paper on the bottom and walls.

Put a bowl in a water bath with a ball of foil in the pot to prevent the bowl from touching the water later. Bring the water to a boil, then reduce the temperature to simmer.

Combine the egg whites, sugar, cream tartar and salt with a mixer, then place the bowl on the prepared pot and in a water bath, stirring constantly with a spatula for about 6-7 minutes, until the cream begins to thicken. When the temperature reaches 83 degrees, remove from the heat and continue to stir until a cream with hard tips is obtained - about 5 minutes.

Whip the vanilla cream until fluffy. Pour in the egg cream and mix until smooth with a spatula, add the coconut shavings.

Transfer the cream to the prepared pan, cover with foil and leave to freeze overnight.

The next day, cut into 9 squares and put back in the refrigerator.

Melt the chocolate in a water bath, adding coconut oil to it. Set aside to cool and dip the milk squares in it.

Place them on kitchen paper and put back in the freezer until the chocolate is firm.

Serve.
