Required products :

  • 40 grams of butter
  • 250 grams of crushed dark chocolate
  • 2 eggs - broken
  • 1 teaspoon sugar
  • 1/4 cup flour
  • 1/4 tea cup of cocoa powder
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1/2 teaspoon baking powder

filling:

  • 250 grams of cream cheese - at room temperature
  • 1/3 tea cup of crystal sugar
  • 20 grams of butter - at room temperature
  • 2 drops of mint essence
  • green food coloring

Method of preparation :

Line a baking tray with parchment paper and turn on the oven, let it reach 160 degrees.

Meanwhile, put the butter and chocolate in a fireproof bowl and melt them in a water bath. When a homogeneous mixture is obtained, remove from the heat and quickly add the eggs, sugar, flour, cocoa, baking powder, salt and vanilla and stir to combine.

From the resulting mixture make piles with a large distance between each in the pan. Bake for about 12-15 minutes. If necessary, bake a second batch so as not to overfill the pan.

Allow the finished cookies to cool.

With a mixer, beat the sugar with the butter, cream cheese, mint and 1-2 drops of green paint to obtain a light mint hue.

Spread the cream on half of the cookies and close with others to make a sandwich. If desired, you can spray the cream for greater effect when serving.
